MEDITERRANEAN CHICKPEA SALAD RECIPE #VEGAN #HEALTHYFOOD


Soooo simple to make, Mediterranean Chickpea Salad is crisp and brimming with dynamic flavors! My duplicate feline rendition of Trader Joe's celebrated Balela Salad formula, this one has olives for an additional briny punch.

Alright, so there's only ONE thing I despise about Trader Joe's and it's that they often cease a portion of my preferred things. I won't get into points of interest yet I become very appended to different items (Helloooo, puffy hotcake balls) that later disappear from the store racks. No clarification… .no expression of remorse. Just… .POOF… .gone.

What's more, .extremely there's something else I disdain… .when they totally adjust the entire store. We live sort of a long way from the closest Trader Joe's so when I find the opportunity to visit it's generally a major ordeal… .and it's normally crushed into a lot of different tasks so I have restricted time.

I like to keep running into the store… snatch what I need… and get the hell out of there in light of the fact that it's consistently a zoo. Particularly with those little lower leg banger small scale shopping baskets with the banner so you can see them coming… .however you never do. You never observe the truck coming until it rams you in the achilles ligament. Am I right?

INGREDIENTS  :

  • 1 15 ounce can Chickpeas rinsed and drained well
  • 1 15 ounce can Black Beans rinsed and drained well
  • 1 English Cucumber Chopped
  • 2 cups grape tomatoes sliced in half
  • 1/2 cup diced red onion
  • 1 cup green olives
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint optional

FOR THE DRESSING:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp lemon juice
  • 1/2 tbsp lemon zest
  • 2 cloves garlic minced
  • kosher salt and fresh black pepper to taste

INSTRUCTIONS  :

  1. In a large bowl, toss together the chickpeas, black beans, cucumbers, tomatoes, olives, parsley and mint until well combined. Set aside.

  3. In a small bowl, whisk together the olive oil, vinegar, lemon juice, zest and garlic. Season with salt and pepper, to taste.

  5. Pour the dressing over the salad and toss to combine.
  6. Cover the salad and transfer to the refrigerator for 30 minutes.

  8. Serve immediately or store in an airtight container until ready to serve.

RECIPE NOTES  :

  • This Mediterranean Chickpea Salad can be made up to 5 days in advance and stored in the refrigerator in an airtight container.
